Oven Roasted Eggplant

Ingredients

1 large or two medium Eggplants, chopped into ½ inch cubes
2 tablespoons Olive Oil
½ teaspoon Salt
½ teaspoon of Pepper

Make it

Preheat the oven to 425.

Drizzle in oil. Sprinkle with salt and pepper.

Place the cubed eggplant on a baking pan and roast for 25-35 minutes or until tender and brown around the edges.
